Broken Spaghetti “Risotto” – There’s a Good Reason for Those Quotation Marks

This broken spaghetti “risotto” is many things – a fun-to-make recipe; a visually unique pasta dish; and a great alternative to the same old starchy side dishes – but one thing it’s not, is a risotto. No rice was harmed in the making of this video.

The “risotto” refers to the similar technique used for that famous Italian dish. Like the grains of Arborio rice, the pieces of broken pasta are tossed in hot butter or oil before the liquid is added, but here we’re going even further, and toasting it to a gorgeous nut-brown.

This gives the dish its signature look, as well as adds a subtle nutty/toasty flavor. The rest of the process is similar to risotto as well, with the broth being added in increments, to be absorbed by the noodles before the next splash is added.

The broth amounts below should be very close to what you’ll need, but as I said in the video, depending on the pan, heat, and size of batch, you’ll have to simply adjust on the fly.

As long as you don’t walk away, you should be fine. Just keep stirring until the liquid is almost gone, then taste, and if the pasta is cooked, you’re done. If it needs more, add a little broth and keep going.

I did this as a simple side dish, but if you added some vegetables and shredded chicken, you’d be looking at quite an impressive main course. In fact, don’t be surprised if you see this dish re-imagined here in the future. In the meantime, I hope you give this a try soon. Enjoy!


Ingredients for 2 small portions:
1 tbsp olive oil
1 cup cut spaghetti, or regular spaghetti broken into very small pieces
2 cloves garlic, finely minced
about 1 1/2 cups hot chicken broth or stock, as needed
salt and chili flakes to taste
1 tbsp chopped fresh Italian parsley
2 tbsp Romano or Parmigiano-Reggiano cheese, or to taste

Colcannon – The Name Has Nothing to Do with Viking-Killing Leprechauns

You’ll be happy to know that since finishing this St. Patrick’s Day-inspired colcannon video, I’ve come to learn what the name actually means. Apparently, “colcannon” is Gaelic for "white-headed cabbage," which I’m sure everyone will agree is not nearly as interesting as my explanation.

Regardless of its etymological origins, colcannon is probably my favorite St. Patrick’s Day recipe. It combines the lovely, Spring-is-finally-here-greenness of kale and leeks with the always-alluring comfort of buttery mashed potatoes. Thinking about this next to some beautifully roasted lamb, makes me wonder why it’s only made once a year?

There are so many holiday-inspired recipes that are certainly easy and delicious enough to be added to the regular rotation, but for whatever reason aren’t. Why don’t we roast a turkey with all the fixings other times of the year? Wouldn’t Easter bread be just as awesome in November? Why we deny ourselves these things the rest of the year is one of the great culinary mysteries.

In fact, I think I’m going to heat up the last of my colcannon, sip on a Guniness or three, and carefully ponder this and other great questions. Anyway, I hope you give this a try soon, and may you all have a very happy and safe St. Patrick’s Day celebration. Enjoy!


For the green mixture:
4 oz trimmed kale leaves
1 leek, light parts only, chopped
1 bunch green onions, chopped
2 tbsp room temp butter
*boil kale and leeks for 5-6 minutes in salted water, then puree with butter and onions in blender
For the rest:
3 pounds russet potatoes, boiled tender, drained VERY well
2 tbsp butter
salt and pepper to taste
1/4 cup cream or milk, or to taste
butter and green onion for the top

Make-Ahead Mascarpone Mashed Potatoes – Holiday Trick and Treat

I thought I was posting a video to show off the advantages of doing mashed potatoes ahead of time, but then I realized all that was nothing more than a diversion to distract you from the fact that I’m really trying to trick you into using an alternative to the standard holiday potato side dish.

These mascarpone mashed potatoes are certainly close enough to the classic recipe to keep any purists in the family happy, but the addition of the mild, creamy Italian cheese, a touch of egg yolk, and copious amounts of butter, elevate this to “special occasion” status.

Besides being a delicious change of pace, the advantages of the casserole delivery system are obvious. You don’t have to time your potato mashing so precisely, and this keeps warm in the casserole dish a long time, so it’s really nice for larger groups.

As always, feel free to alter this to your tastes. I do add a substantial amount of butter, but a few times a year I feel like I’ve earned that right, and do so unapologetically. I hope you do the same. Enjoy!


Ingredients:
4 1/4 pounds russet potatoes
salt and pepper to taste
cayenne to taste
1 cup butter (2 sticks)
1/2 cup mascarpone cheese
3/4 cup milk
1 egg yolk

French Onion Green Bean Casserole – It’s Soupy!

If someone calls your green bean casserole “soupy,” it’s usually not a compliment. Here though, it’s completely appropriate. I wanted to rework the iconic Thanksgiving side dish, and wondered what would happen if I brought in some of the tastes and textures that make French onion soup such a favorite.

Somewhat strangely, the final product didn’t remind me at all of French onion soup, but was quite delicious nonetheless, and would certainly be well received around your holiday table. Caramelized onions and melted Gruyere cheese are never a bad idea together, and would make for a great alternative to the old, canned fried onion-topped version.

One small change I would make next time, and that I’ve added to the ingredients list, is a small splash of sherry vinegar added to the onion mixture. As you hardcore foodwishers know, that is the secret ingredient in our famous French onion soup recipe, and I believe it would have better balanced out the sweetness of the dish.

Of course, it goes without saying that you can use just about any cheese you like, and a nice sharp cheddar would definitely work very well here. Anyway, as you start to put together your Thanksgiving menu, I hope you keep this “soupy” side dish in mind. Enjoy!


Ingredients:
For the onions:
2 tbsp butter
2 or 3 yellow onions, sliced
salt and pepper to taste
1 tbsp sherry vinegar (stirred into the onions after they are caramelized)

For the white sauce:
2 tbsp butter
2 1/2 tbsp flour
2 1/2 cups milk
pinch of nutmeg
cayenne to taste
1/4 tsp dried thyme
salt and pepper to taste

For the topping:
2/3 cup panko or other style bread crumbs
2 tbsp melted butter

For the rest:
2 lbs green beans, trimmed, blanched
salt and pepper to taste
4 oz grated Gruyere cheese, divided
1/3 cup grated Parmesan cheese

Sweet Potato Casserole with Pistachio Crust – Save the Mini Marshmallows for Your Hot Chocolate!

Of all the traditional Thanksgiving side dishes, sweet potato casserole scares me the most. Luckily, for the vast majority of holiday meals, I’ve been the one who got to decide on and cook the menu. But there have been the rare occasions when I’ve been a guest at someone’s home, and subjected to the horror that is the mini marshmallow-topped dish of sweet potatoes.

Don’t get me wrong, when it comes to food, I’m as opened-minded as anyone...hey, one time, I actually ate a McRib...but I just don’t understand taking something already as sweet as sweet potatoes, and topping it with one of the sweetest ingredients ever.

Sure, my topping has some brown sugar in it, but I think it’s balanced nicely by the crunchy savoriness of the pistachios. I also forgo the usual scoop of sugar in the filling for a much smaller amount of maple syrup (which, contrary to what you learned in school, is a one-syllable word).

The result is a rich and decadent, yet not cloyingly sweet side dish. By the way, as I mention in the video, the sweet potatoes I used may be called “yams” at the store, but the fact is that all yams sold in American supermarkets are really varieties of sweet potatoes.

Having said that, my recommendation is for using “Garnet Yams,” if you can find them. If you can’t, literally any other variety will do. I hope you give this great side dish recipe a try. Enjoy!



Ingredients:
For the sweet potatoes:
2 1/2 lbs sweet potatoes
salt to taste
2 tbsp butter
2 large eggs
1/4 cup maple syrup
1/4 cup buttermilk
1/3 cup milk
1/2 tsp vanilla
1/2 tsp salt
pinch of allspice
pinch of cayenne
For the pistachio crust:
1/2 cup chopped pistachios (I used roasted, salted)
1/2 cup light brown sugar
1/3 cup all-purpose flour
4 tbsp melted butter

Root Vegetable Gratin – Notes from the Underground

[I hope you enjoyed our first and last Dostoevsky reference] Whenever I see those big piles of rutabagas at the market, I always think to myself, “who the heck is eating all these root vegetables?” 

I understand that there’ve been times when we literally had no choice – it was either gnaw on a parsnip or perish, but nowadays with so many other delicious choices, why would anyone eat root vegetables on purpose? Has anyone ever stumbled out of a smoky dorm room late at night, in search of a big plate of steamed turnips? Probably not. 

So, while you’ll never catch me boiling up a batch of these fugly roots to enjoy their intoxicating sulphurous savoriness, I have been known to tolerate them in the occasional gratin.

Of course, I cheated and added some potatoes to mellow things out, but still, all kidding aside, this is a very delicious and enjoyable way to eat them, and would make a fantastic side dish for the holidays. And yes, I do know that potatoes are tubers and not roots, so save your emails. Enjoy!


Ingredients:
1 turnip
1 rutabaga
1 small celery root
2 yukon gold potatotes
1 parsnip
* root vegetable sizes and shapes vary, but bottom line, you’ll need enough to fill a 9 x 13-inch casserole dish up 3/4 of the way
salt to taste (be sure to generously salt the boiling water!)
2 tsp olive oil
2 tbsp butter
3 cloves minced garlic
1 cup cream
pinch of nutmeg
pinch of cayenne
1 tbsp fresh picked thyme leaves
1 1/4 cup chicken broth
1/4 cup finely grated Parmesan cheese, divided

Creamy Wild Mushroom Ragout – A Triple Threat of Fungi Flavor

This very easy mushroom ragout, not only looks and tastes great, but it one of those magical recipes that shines equally as bright whether you serve it with breakfast, lunch, or dinner. We call these dishes, “triple threats,” and they’re important weapons in any cook’s arsenal.

Imagine this under a perfectly poached egg for breakfast – the golden yolk slowly running into the hot mushrooms and creamy sauce; all sitting on a thick slab of crispy toast. It’s almost too perfect to comprehend. I said “almost,” so try to comprehend it.

For lunch, I can’t think of a better meatless meal than this and a cold, crisp green salad. You could score bonus foodie points for using the same vinegar you used in the ragout, to make the dressing.

For dinner, the possibilities are endless. There are very few meat-based main courses this wouldn’t make a very handsome side dish for. Or, used as a sauce for those meats, or even just over a plate of pasta.

As I mentioned in the video, literally any combination of fresh mushrooms will work. If you can’t get fresh wild mushrooms, you can always use the trick of adding some dried porcini or morel to plain button mushrooms. These are now sold at virtually every large grocery store, and their funkier flavors will permeate the porous flesh of the regular ‘shrooms.

Anyway, I’m not in the habit of threatening my readers, let alone triple-threatening them, but I really hope you all give this outrageously delicious mushroom ragout a try soon. By the way, don't forget we showed you all how easy it is to make you own creme fraiche in this video. Enjoy!

1 1/4 lbs mixed mushrooms, sliced
1 tbsp olive oil
1 1/2 tbsp butter, divided

Stuffed Summer Squash with Merguez Sausage and Goat Cheese – Tastes Like Not Summer Squash

I always smile when I hear chefs say you should never cover-up or overpower the natural flavors of the main ingredient. Yes, sometimes you should, and this Merguez sausage and goat cheese stuffed summer squash recipe is a perfect example.

Show me a person that would honestly claim that these lovely summer squash would have been better had we not stuffed them with spicy lamb sausage and cheese, and I’ll show you a vegan.

This is one of those recipe videos where I want you to pay attention to the concept and the simple procedure, and not necessarily the ingredients I used. There are so many varieties of squash that would work here, and ten times that in sausage/cheese combos.

These stuffed squash will be especially useful if you’re living next door to the “why the hell do they plant such a huge garden?” neighbors. You know the ones; sweet, older couple, eight kids all moved out, and yet they still plant like two acres of zucchini and crookneck squash.

The next time they leave that 20-lb basket on your doorstep, give this amazing recipe a try. Enjoy!


Ingredients:
5-6 round green summer squash, halved
4 oz Merguez sausage, or any spicy sausage
2-3 oz fresh soft goat cheese
1/2 cup diced red bell pepper
salt and pepper to taste
breadcrumbs and olive oil as needed

Sufferin' Succotash Salad

I've been looking for a tasty way to show off this ultra-fast and easy barbecue sauce vinaigrette idea, and this almost raw succotash salad proved to be a perfect vehicle. And to think, I almost ruined it by doing it the right way.

Originally, I was going to grill the corn first, and then slice the cooked kernels into the salad. As I started to prep, I took a little nibble off the end of the ear, and it was so sweet and juicy that I decided to change the plan, and go au natural.

Thanks to the sweet, starchy crunch of the raw corn, the combination of tastes and textures in this salad is outstanding. Sure, you could certainly add more than the four ingredients called for here, but I'm wondering if that would really make this any more perfect.

This succotash salad is great for those occasions when you need to bring a side dish to the company picnic, or family reunion, and want to arrive with something that looks like you put in a lot more effort into it than you actually did.

As you'll see in the clip, the dressing could not be simpler, but will rely on a quality barbecue sauce to bring everything together. I used my wife Michele's famous SFQ sauce, but your favorite barbecue sauce should work out as well (assuming it's deeply-flavored, complex, and kind of spicy).

Anyway, this may not be the most exciting, or visually thrilling thing we've made around here, but what it lacks in aesthetic charm, it more than makes up for in everything else. I hope you give it a try soon. Enjoy!

Cream Cheesy Cubed Zucchini with Lemon and Oregano

Those of you expecting some kind of char-grilled hunk o' meat, fat-glistening-in-the-sun-type video for Memorial Day will probably be disappointed to see this humble zucchini dish. I really can't blame you. It is zucchini for heaven's sake.

I've been busy traveling on some secret business trips recently, so while I'd normally have a hard time feigning such excitement over squash, considering how much time I've had, I'm actually quite thrilled with how this came out.

I didn't start out trying to make a creamy zucchini recipe, but when I glanced in the fridge and saw the last crumbled remains of fresh cream cheese, I knew those green cubes sizzling away in the skillet were about to get enriched.

Like I said in the video, this would make a pretty nice side dish for all that grilled meat you are going to tong this summer, or as an impressive base for grilled chicken, fish, or shrimp. Also, to get extra fancy, use crème fraiche (preferably homemade) instead of the cream cheese. Enjoy!

Duck Fat Green Garlic Home-fried Potatoes - Skin for the Win

I'm just guessing, but I bet there's some old French kitchen expression that roughly translates to, "Hey, it has crispy, fried duck skin crumbled over the top, how bad can it be?" This video recipe for duck fat homefries is perfect when you find yourself in possession of this highly coveted ingredient.

The recipe is the easy part, finding duck skin is a little more challenging. The easiest method of attainment is to know a duck hunter. They can hook you up faster than you can say, "Nice Elmer Fudd hat." If that's not an option, try and make friends with line cooks who work at restaurants that serve duck. They can make it happen, and it will probably only cost you a couple draft beers.

Finally, you can go to a butcher that sells whole ducks, and have him break one down for you. Tell them you'd like two nicely trimmed breasts, two leg quarters, and all the excess skin from the rest of the carcass. They will smile knowingly, and say no problem (for extra credit, ask for the bones, which you can roast and make a killer stock).

Once you have your precious skin, the recipe is a breeze. If you can find green garlic, it's very nice in this, but regular onions, leeks, shallots, scallions, etc. are a fine substitute. These potatoes would sure make a memorable side dish to a seared, sous vide duck breast, or how about as a plate-mate to a creamy goat cheese omelet? By the way, I'm much hungrier now than I was when I started this post. Enjoy!

1 cup duck skin and fat trimmings
4 small russet potatoes

A Hazy Gaze at a Glaze for the Lazy Days of Summer

This somewhat mysterious post is for a Pinot-glazed mushroom burger topping that will make it's official appearance as part of a sponsored recipe I'll be doing at a future date. I can give no details, except that it's a cheeseburger, and it kicks ass.

I'm not a huge fan of sloppy toppings for cheeseburgers. I don't mind beef grease dripping down my forearms, but I'm not really into chopped vegetable matter following it down my elbows. These mushrooms are a delicious exception. Plus, they're not even that messy.

The key is browning whatever fungi you happen to choose in a good amount of brown butter. Then, when you add the pinot noir, the wine will glaze the surface rather than soak into the mushrooms. The fat sort of makes the flesh wine-proof, and everybody wins.

Stay tuned for the mysterious burger post, and the next time you want to dress up a cheeseburger, give these pinot-glazed mushrooms a try. Enjoy!

What's Green, Misunderstood, and Full of Hot Air? Asparagus Souffle!

We also would have accepted the answer, "Al Gore." This video recipe demonstrates my basic game plan for any savory, vegetable-based soufflé. Contrary to popular belief, soufflés are not very difficult, as long as you respect the laws of physics.

The cartoon cliché of the housewife crying over a fallen soufflé (because her stupid husband slammed the door) has become an iconic scene of culinary incompetence. Well, I have some good news… these types of soufflés are supposed to fall down.

If you're doing a big cheese soufflé for a dinner party, or the classic Grand Marnier soufflé for dessert, then yes, by all means, bring it to the table straight out of the oven and fully erect. After a minute of oohs and aahs, you serve your highly impressed guests.

But these vegetable soufflés are a simple, seasonal side dish, and all that pomp and circumstance isn't necessary. You don't need to serve this right out of the oven, and you really shouldn't. To really appreciate the taste and texture, the soufflé should cool a bit.

Having said that, if you are doing these for a dinner party then you'll get the best of both worlds; since your guests will invariably be milling about the kitchen while you're cooking, they will see you asparagus soufflés in all their inflated glory anyway.

I hope you give this recipe a try, and also experiment with other vegetables. Broccoli, artichokes, leeks, spinach, or any other edible plant you can puree, should work with the same basic procedure. You can also play around with your cheese options, and as I mentioned in the video, a sharp, white cheddar is my fromage of choice. Enjoy!

Couscous Primavera – Because I Don't Get Enough Hate Mail from Morocco

Well, it started before I even posted the recipe. Here's a comment from the couscous primavera tease post I did yesterday:

Soukaina said... "plz plz plzzzzzzzzzz !! I am begging you !! stop massacring couscous !! I'm a Moroccan ; been born there , lived there my entire life so I know what I'm talking about !! there's one way and one way only to make couscous , and yours is just not it !! but if you prefer changing some ingredients or adding some stuff to it? that's fine ! do as you wish !! just don't call it couscous."

First of all, I'm only calling this couscous because the package says, "Couscous," and the stuff inside the package was couscous – or at least what we Americans get as couscous. 

Secondly, as with all my ethnically inspired dishes, I don't claim this is in any way authentic. I'm sure it's not, but not having ever had "real" Moroccan couscous I can't argue which version is better, so I'll just assume mine is.

Anyway, the point is, we're not trying to "massacre" anyone's cultural/culinary heritage. This is how we do couscous around these parts, and it's tough to knock a healthy, delicious, and easy side dish that takes about 10 minutes to make.

I'm obviously borrowing the name from the ubiquitous spring dish, Pasta Primavera, which like this recipe hopes to take advantage of fresh, seasonal, green produce. Speaking of which, you are highly encouraged to use whatever vegetables look good at your local (hopefully farmer's) market.

Please note: check the instructions on whatever package of couscous you happen to use. Times vary from 5-10 minutes depending on the brand. Enjoy!


Couscous Ingredients:
2 cups couscous
2 tablespoons olive oil
1 jalapeno, minced
1/2 cup chopped green onions
1/2 tsp cumin
salt and freshly ground black pepper to taste
big pinch of cayenne
2 cups vegetable or chicken stock
1 small bunch asparagus, cut into 1/4-inch pieces
1 cup freshly shucked green peas (or sub frozen like me)
2 tablespoon chopped fresh mint, or other sweet herbs

Pickled Grilled Vegetables – Now, Why Didn't I Think of That?

This pickled grilled vegetables technique was my favorite new discovery on the Kingsford University trip. It's quite a simple, and seemingly obvious trick, yet it never occurred to me. It's times like these when I'm faced with the tragic realization that I'm not as smart and creative as I think I am.

Basically, small pickling cucumbers (which I've always called, "pickles," even if they aren’t pickled yet, just to be confusing), as well as other firm vegetables, are seared briefly over very hot charcoal, before being packed in the sweet and sour pickling liquid.

The grilling imparts a subtle smokiness, as well as a little extra sweetness from the caramelization of the vegetables. I can see these being a regular fixture on the picnic table during the upcoming grilling season. What a perfect compliment to a platter of barbecued pork, or grilled chicken.

These tasted great after just one day, and even better after three. Please don't ask me how long they will last in the fridge, as I believe they should be eaten before that would become any kind of issue. Plantains for Your Membranes – Fried Sweet Plantains for the Winter Blues

According to my sources deep inside the online health community, eating plantains can help fight Seasonal Affective Disorder (S.A.D.), or as it's more commonly called, the "winter blues." 

I don't really have issues with S.A.D., and when I do, I usually fight it with beer, but it is nice to have another option.

It may be the tryptophan, a natural mood enhancer, or the high levels of vitamins C, B6, B12, or maybe it's just all that fiber, but whatever it is, I can report anecdotally that I felt pretty happy after eating these golden-browned beauties.

Above and beyond the purported health benefits, I have an even better reason to try plantains: meatless boredom. I like to mix in the occasional meatless meal, but tend to repeat the same old standbys. Plantains are perfect for breaking up that routine. Besides, I bet that some of your have never even tried them before, and that's just not right.

If you live near any kind of large city, especially one with a Latin-American community, you should find these fairly easily. As I mention in the video, you've probably looked at them many times at the store, but were unsure of exactly what they were, or what you should do with them.

Apple Jicama Coleslaw – Don't Believe Everything You Read in the Produce Aisle

This crispy, crunchy, and extremely refreshing coleslaw recipe features a very under-utilized vegetable found in almost every large American grocery store's produce section – I'm talking about jicama.

In fact, there's a good chance you'
ve never had it, which is a shame. The flavor is very mild, and subtly sweet. It's just perfect for raw salads like this coleslaw, and blends wonderfully with the tart apple and crunchy cabbage.

One problem with jicama is how it's marketed. As you'll see in the video, the label described it as, "a Mexican potato," which is just a terrible comparison. If you want to make something sound unappetizing to an American, have them think they are going to be eating something that's like a raw potato. Yum.

Jicama does have a similar texture to a raw potato, but that's where that comparison ends. It is a little starchy, but pleasantly so, and each bite produces a mini explosion of juicy goodness. Apple Jicama Coleslaw Ingredients:
1/2 small green cabbage, sliced into 1/4-inch strips
1/2 jicama, sliced into 1/4-inch strips on a vegetable slicer

Artichoke and Spinach Stuffed Shells - A Lesson in Leftovers

I love cooking with leftovers, and this artichoke and spinach stuffed shells recipe is a perfect example of why. There's something very satisfying about turning a dish of tired leftovers into a vibrant new creation. It's also great exercise for your cooking muscles, which should never be confused with your following-a-recipe muscles.

When you follow a recipe, you're tying to manipulate food into something fabulous that fits some beautifully idyllic description, or looks like some photoshop'd picture in a cookbook. When you're cooking with leftovers, you don't have as lofty of a goal. In fact, your usually just trying to keep something from going straight into the bin.

Much like a sports team that has nothing to lose, and plays great because of their free and easy attitude, the same thing often happens when cooking with leftovers. In fact, if I weren't so jetlagged, I'd come up with some brilliant metaphor for living life with this same approach.

Due to dangerously high quantities of food at our Super Bowl party (by the way, how 'bout dem bones!), I found myself with a significant amount of leftover spinach artichoke dip. I've always enjoyed spinach and ricotta stuffed pasta shells, so I thought I'd see if I could turn this fairly unattractive dish of food into something slightly less unattractive.

As you'll see from the video, I think I succeeded. The would have been too long had I included the making of the béchamel sauce, but we've done that one many times, and you can see that recipe video here. I just made a standard batch of white sauce, and tossed in a handful of grated Gruyere.

Anyway, I hope this video inspires you to take a look around the fridge, and fearlessly, and without any grand expectations, make something into something else. Enjoy!

Artichoke and Spinach Stuffed Shells Ingredients:
(recommended as a side dish)
3 cups leftover spinach artichoke dip
1 generous cup ricotta cheese
1 egg
salt and fresh ground black pepper to taste
red pepper flakes to taste
juice from one lemon
1 box jumbo shells
1 batch béchamel sauce with 1 cup of grated cheese added to it at the end
1/2 cup grated Parmigiano-Reggiano cheese

Brussels Sprouts Roasted with Cipollini Onions – Warning: Takes Longer than 60 Seconds

As many of you know, I also do recipe videos for About.com, but what you don't know, and would probably never guess, is that out of all the recipes I've produced for them, the most popular is a Brussels sprouts dish!

It's called 60-Second Brussels Sprouts, and you can see the original post here. As the name suggests, the recipe calls for a super-fast sear-and-serve approach. Here, we're at the other end of the spectrum. These actually get cooked twice, and for a much longer time.

The secret here is a quick blanching in boiling salted water, and then 15 or 20 minutes in a really hot oven. The searing heat and natural goodness of the vegetables do most of the work, so nothing more than a little brown butter and seasoning are needed.

This would make a very nice side dish to your holiday feast, and I can't think of a main course, especially one made from some type of succulent animal, that this wouldn't pair wonderfully with. If you can't find the Cipollini onions, just use pearl onions, or you can just leave them out altogether.

By the way, the Brussels sprouts only need a couple minutes blanching to prepare them for the oven, but the Cipollini onions should be cooked almost to the point of being tender before being roasted. You want that nice mellow, sweet onion flavor, not something sharp and jarring to the palette.

Once-a-Year Scalloped Oysters

Some recipes you only make once a year because they're just so-so. Other recipes, like this dish of scalloped oysters, you only make once a year because they're too good.

Scalloped oysters are so rich and decadent, it's a recipe you save for those very special occasions. Happily, we have a bunch of those coming up. This great holiday treat features the briny bivalves baked in a creamy, buttery casserole.

One word of warning: if you don't love cooked oysters, you should probably not make this. By the way, scalloped oysters is one of those recipes that are actually better warm, than piping hot, which is another reason it makes such a great choice for large family gatherings. Scalloped Oysters Ingredients:

3 cups saltine crackers, coarsely crushed
1/8 teaspoon cayenne pepper
3/4 cup melted unsalted butter
1 quart shucked oysters with liquor
1 cup heavy cream
2 tablespoons chopped Italian Parsley
salt and fresh ground black pepper to taste
lemon wedges, optional
